Whether it’s the Galouti kebabs and kulcha nihari of Lucknow, the dahi bhalla and aloo tikki chaat in Delhi, puchkas and kathi rolls in Kolkata, vada pav in Mumbai, pyaaz ki kachori in Jodhpur or khaman dhokla and dabeli in Ahmedabad - there’s little chance that you’ll go hungry. Wash this down with a glass of falooda, creamy lassi, or a plate of malai kulfi.
