About Restaurant

An Edible Archive lives within each of us. We each carry in our senses, bodies and memories the experiences of foods we have eaten.  At the Edible Archives restaurant, we aim to create a collective sensory catalogue that belongs to all the people involved in growing, sourcing, preparing and eating a meal.

In this age of climate change and rapidly depleting biodiversity, Edible Archives is ingredient-driven and cuisine-agnostic. We spotlight a wide variety of traditional ingredients across cultures, sourcing them directly from farmers and local vendors. We use only fresh, seasonal produce, seafood, meat and grains, grow many of our ingredients ourselves, and limit waste as much as possible.
